Before being master pasta makers and millers, we are farmers – that’s what makes the difference!
In our organic farm in Tuscany we make pasta, stone-ground flours, cereals, pulses, wine…and everything is organic! We have decided to invest in the reorganization of the supply chain to ensure the sustainability of native crops. All stages of the cereal supply chain take place within our farm, in perfect balance between tradition and modernity!
Stone grinding enhances the quality of Ancient Grain as it retains the natural proportions of the grains being ground – including wheat germ.
Wheat germ contains many nutrients such as vitamin E and B, mineral salts – phosphorus, potassium, and magnesium –, fiber and antioxidants. While these nutrients are generally lost in the process of industrial refining, they are still present in stone-ground flours, thus providing healthier and more balanced foods while preserving a genuine, distinctive flavour.
Inside our mill, Ancient Grain are stone-ground to make the durum wheat and flours that are used to make our unique artisanal pasta.
Our pasta is made with flours that have been stone-ground in our own mill. After being bronze drawn, it dries slowly at a low temperature. The result is the artisanal pasta from Mulino Val d’Orcia – a unique kind of pasta with a rough and porous texture, a beautiful amber colour and an unmistakable flavor!
