All the dishes on our menu are made with organic stone-ground flours from ancient grains, produced by us. Before being master pasta makers and millers, we are farmers — and that’s what makes the difference: we oversee the entire grain production cycle, from field to table. Visit the mill right next door and see for yourself how the products you’re about to taste are made.
